In August, we had our first kids cooking lesson in our series “Cooking for Kids.” We baked biscotti that were decorated, drizzled and covered with chocolate and other surprise toppings. After the lesson, we received requests for gluten free classes. We offer a number of gluten free online cooking experiences including gluten free arancini, biscotti, and eggplant Parmigiana. Today we want to share a fantastic recipe for gluten free cookies.
Years ago, I received Luca Montersino’s Le Dolci Tentazioni (“sweet temptations”) cookbook as a gift. Montersino is known for his “healthy” pastry recipes, many of which are gluten free, opt to use olive oil rather than butter and include grains like kamut and quinoa rather than overly processed wheat and flour. I often do the same in my kitchen experimenting by substituting more healthy ingredients/alternatives for ones used in more traditional recipes.
A gluten free recipe that is a regular in my repertoire is inspired by Montersino’s gluten free “diamantini di cioccolato, riso e caffè.” Chocolate and coffee are two of my loves and the recipe is simple. The cookies are melt in your mouth-crumbly and pack a chocolate punch. Serve them warm or at room temperature.

Ingredients for 140 Gluten Free Chocolate, Rice & Coffee Cookies
- 450 g (2 cups) butter
- 250 g (2 1/4 cups) powdered sugar
- 2 large egg yolks
- 1 medium egg
- 500 g (2 1/2 cups) rice flour
- 60 g (1/2 cup) cocoa powder
- 150 g (2/3 cup) sugar
- 1- 2 tsp of instant espresso or coffee made in a moka pot
Combine butter, powdered sugar until smooth. Incorporate the egg yolks one at a time. Add one medium size whole egg. Mix well. Add rice flour and cocoa powder in batches until the dough in uniform and firm. Divide into sections of approximately 7 oz/200 g each.
Shape into slender cords. They don’t look appetizing at this point but trust me you won’t be disappointed!
Mix the sugar and espresso together. Place on a non-stick surface. Roll each cord in the sugar/instant espresso mixture. Slice into 3 cm/approximately 1 inch pieces.
Place on baking sheet. Bake at 180 C (350 F) for 15 minutes.
This recipe yields 140 cookies.
