Summer is here, and with it our June and July calendar of online interactive cooking classes and wine tastings with delicious new dishes and classics that you cannot miss! #whatscooking!
The Casa Mia team (Gina, Eleonora and Carolyn) are once again offering a multitude of one-plate simple interactive cooking lessons and wine and cheese tastings in June and July as a way to bring the universal us together during this time of social distancing.
We have two new events scheduled in July that you will not want to miss: a special Sicilian guest appearance and a wine, cheese cooking extravaganza!
As always, lessons are geared toward home cooks like us, and are open to all. Check out our June and July cooking classes and wine and cheese tastings below. Most importantly, remember to sign up before classes fill up!
Friday, June 11 – Pollo con i Peperoni (chicken with peppers)
Pollo con i peperoni, aka pollo alla Romana (Roman-style chicken), is comfort food at its best. It’s cooked at home as often as it’s found in cozy family-run trattorias. A delicious dish that’s quick and easy to make, and which will quickly become a part of your summer go to recipes.

Saturday, June 12 – Wine & Cheese: Picnic Wines
The focus of our June lesson is wine, cheese and picnics. We will taste 3 wines paired with 3 cheeses made in different styles for a delightful sensory experience, and we will suggest wines that pair well with picnic food like pasta salad, torta rustica, pomodori al riso, and frittata. Pairing lessons are taught in tandem by Eleonora, our resident cheese expert, and Gina, our natural wine lover. Moreover, both will share some of their wine and cheese adventures.

Saturday, June 19 – Artisanal: Ravioli all’Uovo – Carbonara
Calling all Pastafarians!!! Have you ever wondered how to make ravioli that contain an egg yolk inside? In this 90 minute class we will carefully examine this art by making a Carbonara-inspired ravioli all’uovo which makes for an impressive primo to serve guests, or simply for you to enjoy!

Thursday, July 8 – Guest Chef Series: Sicilian Eggplant Timballo with Fresh TagIiolini
This month we welcome Chef Fiora from Sicily. On the menu is Eggplant Timballo, an iconic Sicilian dish which you may remember featured in the food-themed movie “The Big Night.” Timballo means “drum” in Italian referring to the shape of this deep dish pasta, encased in fried eggplant. Fiora will guide you through making fresh pasta, the sauce and assembling the timballo.

Thursday, July 15 – Summer Antipasti with Carolyn
Looking for inspiration for your summer get togethers? The last thing you want to do is be stuck in the kitchen while your guests are outside enjoying the weather. Join us to learn three dishes that are perfect to make ahead of time to ensure that the host actually has a good time too. Roasted eggplant, Spring Onions and Guanciale, and Whipped Ricotta are on the menu.

Saturday, July 17 – Summer Aperitivo with Casa Mia
Summer is here! And what better way to celebrate than with a delicious aperitivo, before Casa Mia goes on a brief August hiatus? Gina and Eleonora–respectively natural wine lover and cheese connoisseur–will kick off the event with a tasting of two of their favorite natural wines from the region of Lazio, paired with two cheeses of the same region. But no aperitivo is complete with some fried goodness. Crispy, crunchy, melt in your mouth fritto misto is a highlight of any aperitivo. The versatile nature of this assortment allows us to pick and choose ingredients to our liking. Let us toast the summer with natural wine in one hand, fritto misto in the other, and cheese on our tongue!

Saturday, July 24 – Pollo alla Cacciatora aka Chicken Cacciatore with Eleonora
Like many popular and widely-known recipes, the origin of Chicken Cacciatore belongs to Italy’s peasant culture. Typical of Tuscany, Umbria and Lazio, the ingredients are never quite the same from region to region. One thing is sure: the original recipe does not include tomatoes, only chicken, a little wine, some vinegar, garlic and rosemary (the simple ingredients farmers had on hand). In conclusion, during our 90 minute lesson we master the art of authentic pollo alla cacciatora, that is in the hunter’s style.
