To unlock the secrets of southern Italian cheese, it’s wise to learn from the source. On this unique experience, you are welcomed to an artisan cheese maker who has risen to world fame. Prepare to gain an understanding of (and taste) a historically important cheese dating back to ancient times.

This half day adventure takes you to the countryside of the Campania region. The farm raises organic sheep and produce in the hills of the Upper Casertano countryside, surrounded by lush vegetation and stunning views. You are welcomed by the owners for a leisurely tour of their farm, where you’ll be asked to participate in a unique hands-on experience. Under the guidance of the only producer of this one-of-a-kind cheese in existence, you’ll partake first hand in the centuries-old conciatura (“dressing”) of their prized Conciato Romano cheese. This is a truly unique product whose tradition dates back, precisely in this area, to the time of the Samnites. After all the hard work, it’s time to be rewarded with a home-cooked lunch at the family’s farmstead restaurant, and whose menu focuses on seasonal and homegrown produce.

  • This tour takes guests to the rustic countryside, comfortable non-slip walking shoes are recommended
  • Note: The floor of cheese making facilities is normally wet and slippery; furthermore parts of the farmland may be muddy after rainfall. Please choose suitable footwear
  • Bring a small reusable shopping bag to bring home cheese and other artisan treats purchased during the tour
  • In summer we suggest wearing a hat and sunscreen, and carrying a small reusable water bottle
  • Tours operate in all weather conditions, please dress appropriately
