Cooking In The Ragusa Countryside

A cooking class held in a private home outside the Sicilian town of Ragusa

While the Baroque town of Ragusa in south east Sicily is undoubtedly impressive, the surrounding countryside is just as spectacular. This untouched part of the island is home to wonderful local produce and with this special tour, you can get to experience this for yourself.

The experience starts with a walk in the garden where your host will show you what is in season and talk about the local produce. Along the way you will pick some ingredients for the cooking lesson, ready to be used.

Next it’s on to the kitchen where the cooking lesson will begin. All ingredients come from the garden or from small local producers, with the menu varying by season. Fresh pasta is usually on the menu, and as part of the cooking lesson you will get to try making and shaping the pasta pieces. You may also learn how to make Sicilian treats such as Scaccia Ragusana (a type of stuffed flatbread), arancini or cannoli.

After the cooking is complete, you’ll all sit down together with your host to enjoy a meal together, which will feature classic Sicilian dishes and local produce. This starts with a decadent aperitivo that may include homemade sourdough bread and preserves (olives, dried tomatoes, jams and chutneys), cheeses and sausages from a local farmer and organic wine from local wineries. After which you will enjoy what you created in your cooking class, before the meal ends with a traditional Sicilian dessert, such as cassatella, or cannoli, coffee and liqueurs.
