To experience the authentic taste of the region’s rural traditions, there’s nothing like spending a day in the Lazio countryside.
A car picks you up at your accommodation and the drive out of Rome is 1 hour through fields and umbrella pine-lined roads. Upon arrival, you are welcomed with a warm and humble ritual: la colazione del casaro, or the cheesemaker’s breakfast. This traditional morning snack features freshly made, still-warm ricotta cheese mixed with coffee, a simple yet surprising combination that offers a genuine taste of local culture.
The visit of the farm starts with a guided stroll through fields to meet the healthy livestock grazing freely in the pasture lands, learning about the traditional and natural farming methods used.
Back in the cheese-making facility, you’ll witness the production of the cheese being made that day. Geared up with disposable protective shoe covers, aprons and hairnets, you’ll enter the dairy, where you’ll receive an in-depth explanation of the cheese-making process. When possible, a live demonstration can be arranged for an additional price, and occasionally, guests may even experience this hands-on, depending on group size and the farm’s production schedule.
After the tour, you’ll enjoy a generous outdoor tasting, featuring a selection of artisanal cheeses and traditional cured meats with wine. To elevate the experience further, you’ll sit down for a full lunch built around the farm’s seasonal and homegrown ingredients.

- Excursions operate in all weather conditions, please dress appropriately
- Given farm animals produce limited amounts of milk in the hotter months, visits cannot be scheduled in the months of July and August
