This is an authentic and off-the-beaten-path adventure, exploring a small cheese producer in the countryside outside of Ortigia.
In the countryside, livestock graze freely every morning and produce abundant, high-quality milk for cheesemaking. The farm produces the local cheeses: Ragusano, provola, caciocavallo, tuma and ricotta.
Upon arrival to a small, family-run dairy farm, guests witness the transformation of milk from the stables to the creamery. The production starts with the curdling of the milk and ends with the shaping of the cheese.
The experience ends with a very important part of this process: a cheese tasting with local wine and snacks!
