It’s April and we are celebrating ONE YEAR of our online interactive cooking classes and wine and cheese tastings!  This past year has been tremendous and we are so grateful to share our love of all that is food and wine with you all.  We believe our April #whatscooking classes will not disappoint!

During the month of April, for each class you take, your name will be entered into a drawing for one month free of Casa Mia classes! Good luck!

The Casa Mia team (Gina, Eleonora and Carolyn) are once again offering a multitude of one-plate simple interactive lessons in April as a way to bring the universal us together during this time of social distancing, in the new year.

Lessons are geared toward home cooks like us and are open to all. Check out our April cooking classes below. And most importantly, remember to sign up before classes fill up!

Thursday, April 1st – Torta di Ricotta (Ricotta Pie) for Easter

Torta di ricotta (ricotta pie) is found in various versions around Italy. In its simplest form it is filled with sweetened ricotta and candied citrus. In today’s lesson, we’ll make Gina’s family recipe that includes chocolate shavings and is enjoyed for Easter.

Friday, April 9th – Fresh Pasta: Garganelli with Prosciutto and Peas

Saturday April 17th – Arancini of the Month – Peas, Ragù & Mozzarella

Back by popular demand, arancini, one of the most loved Sicilian snacks and street foods. On the menu today are the most classic arancini variety. Filled with a meat ragù, green peas, and mozzarella, this hearty rice ball can be eaten as an appetizer, a snack, or even as a meal served with a salad.

Thursday, April 22nd – Fresh Pasta: Sweet Potato & Chickpea Gnocchi with Walnut Arugula Pesto

Gnocchi is one of the most loved Italian pasta shapes. Today we’ll make a gluten free version with sweet potatoes and chickpea flour. Tossed with walnut arugula pesto, it’s sure to become a regular in your kitchen line up.

Friday, April 23rd – Saltimbocca alla Romana

Literally, “jump in the mouth,” quick and elegant saltimbocca is a typical dish of Rome that calls for just three main ingredients: veal cutlets, prosciutto, and fresh sage. During our 90-minute interactive cooking lesson, we learn to make these delightfully addictive morsels.
