Happy New Year! Welcome to January! New month, new year, new lessons! Our January #whatscooking schedule of interactive cooking lessons and wine tastings is brought to you from our homes to yours!
We Casa Mia team (Gina, Eleonora and Carolyn) are once again offering a multitude of one-plate simple interactive lessons in January as a way to bring the universal us together during this time of social distancing, in the new year.

Wednesday, January 6 – Ribollita
As the weather turns cold, our need for comfort and warmth is fulfilled by the classic Tuscan soup, Ribollita. This one-pot-wonder combines classic Tuscan vegetables, beans, and day old bread to create a rustic, yet elegant dish that only gets better with time. In this 90 minute cooking experience we will make enough of this hearty bowl to have for the next day where only the gift of time can enhance the already mouth watering flavors of Ribollita.

Sunday, January 10 – Fresh Pasta: Maltagliati Pasta & Lentils
Today a one pot meal of pasta and lentils are on the menu. Made from a few pantry essentials pasta e lenticchie is an inexpensive, delicious, vegan and nourishing meal. What makes this dish unique is that the maltagliati (poorly cut) pasta are home made and are cooked with the lentils creating a rich, creamy sauce.

Friday, January 15 – Fresh Pasta: Orecchiette with Sausage and Broccolini
The classic flavors of sausage and broccolini combined to create an easy, yet satisfying meal that can be utilized as a week night staple or for an indulgent weekend splurge. Fresh orechiette pasta provides a perfect backdrop for these iconic ingredients to shine. Sweet, spicy, salty, and a hint of bitterness intermingle to allow an enhanced experience your taste buds will not forget!

Saturday, January 23 – Wine & Cheese Tasting: The Region of Sicily Part 2
Our Sicily part 1 Sicily pairing lesson was so successful that we decided to offer a new journey to the beguiling island of Sicily, tasting 3 more Sicilian wines paired with 3 cheeses made in different styles and with an assortment of milk types for a delightful sensory experience. Pairing lessons are taught in tandem by Eleonora, our resident cheese expert, and Gina, our natural wine lover. Both share more of their Sicily wine and cheese adventures.

Sunday, January 24 – Mozzarella in Carrozza
Native to the Roman surroundings, this simple fried antipasto is beautifully decadent. Despite its name, which literally translates to “mozzarella in a carriage,” mozzarella in carrozza is a delightful fried antipasto typical of Rome. During our 90-minute class we assemble, fry and finally enjoy it in absolute disorderly fashion, producing long stretchy ribbons of melted cheese, greasing chins and fingers alike.

Sunday, January 31 – Cooking with Kids: Torta Caprese for Valentine’s Day
Chocolate cake and kids just go together! This chocolate cake hailing from the island of Capri, utilizes almond flour combined with rich chocolate to produce an intensely flavorful dessert. No crumb will be left behind! In this 60 minute interactive kid friendly class, we will melt, stir, and bake a delicious and Gluten free cake. A sweet Valentine’s Day treat!
