The Casa Mia team (Gina, Eleonora and Carolyn) are once again offering a multitude of one-plate simple interactive lessons in March as a way to bring the universal us together during this time of social distancing, in the new year.

Saturday, March 6th – Carbonara Day Special
You have one month to perfect Rome’s most popular pasta recipe before Carbonara Day! In the first week of April, Italy and the world pay homage to the guanciale-egg-pecorino triumph by making, eating and sharing photos of ambrosial Carbonara. You’ll learn the tricks to perfect Carbonara from a Roman native, and join in on the worldwide fun with your rendition. During our lesson your instructor Eleonora will teach authentic Carbonara as well as share her tips on how to make a version with pasteurized eggs.

Tuesday, March 9th – Fresh Pasta: Sweet Potato Gnocchi
Using fresh ricotta, roasted sweet potato, herbs and spices, this dish brings us into sensory overload. The beauty of these littles pillows of love are only outdone by their taste. Finished in a gorgonzola cream sauce, treat yourself as you cozy up to this decadent dish with a nice bottle of wine. Start time: 5:00 pm EST

Saturday, March 13th – Wine & Cheese Pairing: Italian Wines for the Easter Lunch
The focus of our March pairing lesson is wines that pair well with the typical Italian Easter lunch. We will taste 3 wines paired with 3 cheeses made in different styles for a delightful sensory experience and we will suggest grape varieties that work well in early spring and that pair well with classic Italian Easter dishes. Pairing lessons are taught in tandem by Eleonora, our resident cheese expert, and Gina, our natural wine lover. Both will share some of their Italian wine and cheese adventures.

Saturday, March 20, 2021 – Arancini of the Month – Peas, Ragù & Mozzarella
Back by popular demand, arancini, one of the most loved Sicilian snacks and street foods. On the menu today are the most classic arancini variety. Filled with a meat ragù, green peas, and mozzarella, this hearty rice ball can be eaten as an appetizer, a snack, or even as a meal served with a salad.

Monday, March 22, 2021 – Uncinetti: Traditional Easter Cookies
Easter sweets are a necessity at every table. Enjoy making one particular traditional Easter cookie, Uncinetti and decorate them to your heart’s content. Slightly sweet with a hint of lemon, these Italian treats are fantastic for breakfast, dessert, or afternoon tea. Buona Pasqua!

Saturday, March 27, 2021 – Pollo alla Cacciatora aka Chicken Cacciatore
Like many popular and widely-known recipes, the origin of Chicken Cacciatore belongs to Italy’s peasant culture. Typical of Tuscany, Umbria and Lazio, the ingredients are never quite the same from region to region. One thing is sure: the original recipe does not include tomatoes, only chicken, a little wine, some vinegar, garlic and rosemary (the simple ingredients farmers had on hand). During our 90 minute lesson we master the art of authentic pollo alla cacciatora, that is in the hunter’s style. Start time: 3:00 pm EST
