April was incredible as we celebrated our ONE YEAR Anniversary of hosting online cooking classes and wine and cheese tastings. On to May along with flowers, warmer temperatures, and sunshine…well hopefully!  We are moving into year 2 of our online interactive cooking classes and wine tastings with delicious new dishes and classics that you cannot miss! Spring is fully in bloom as is #whatscooking!  

The Casa Mia team (Gina, Eleonora and Carolyn) are once again offering a multitude of one-plate simple interactive cooking lessons and wine and cheese tastings in May as a way to bring the universal us together during this time of social distancing, in the new year.  Stay tuned for faces as our chef friends find time to spend with our beautiful community.  

As always, lessons are geared toward home cooks like us and are open to all. Check out our May cooking classes and wine and cheese tastings below. And most importantly, remember to sign up before classes fill up!

Monday, May 3rd – Fresh pasta: Farfalle with Green Pea Ragu

Spring has sprung and farfalle are all around. Farfalle, also known as butterfly shaped pasta, is a festive and delicious pasta hailing from Northern Italy. Paired with a green pea ragu, this vegetarian dish is light yet satisfying. Inspire your taste buds to take flight like only farfalle can.

Thursday, May 6 – Neapolitan potato gattò aka Potato Gateau

What’s not to like about Neapolitan gattò di patate? Potatoes, provola, salami and mozzarella are some of the ingredients that make this savory dish irresistible. In today’s lesson we’ll make Gina’s family recipe. Enjoy it as a side, a snack or as a meal with a salad.

Wednesday, May 12 – Italian dolce: Zeppole

Please meet the sweet Italian cousin of the doughnut: Zeppole. These lightly fried fluffy treats are common throughout Italy, in a variety of forms, to celebrate many festivals. Join us for this 60 minute dolce class that will leave your sweet tooth satisfied.

Saturday, May 22 – Wine & Cheese Pairing: Value White Wines

The focus of our May pairing lesson is white value wines. We will taste 3 wines paired with 3 cheeses made in different styles for a delightful sensory experience and we will suggest grape varieties that offer great quality and value. Pairing lessons are taught in tandem by Eleonora, our resident cheese expert, and Gina, our natural wine lover. Both will share some of their Italian wine and cheese adventures.

Sunday, May 23 – Fresh Pasta: Sweet Potato & Chickpea Gnocchi with Walnut Arugula Pesto with Gina

Gnocchi is one of the most loved Italian pasta shapes. Today we’ll make a gluten free version with sweet potatoes and chickpea flour. Tossed with walnut arugula pesto, it’s sure to become a regular in your kitchen line up.
