Welcome December! New month, new lessons! Our December #whatscooking schedule of interactive cooking lessons is brought to you from our homes to yours!

We’re all revved up for the holidays and the Casa Mia team (Gina, Eleonora and Carolyn) are once again offering a multitude of one-plate simple interactive lessons this month as a way to bring the universal us together during this time of social distancing, in the happiest time of the year.

Lessons are geared toward home cooks like us and are open to all. Check out our amazing December cooking classes below. And remember to sign up before classes fill up!

antipasti

Tuesday, December 1 – Holiday Antipasti

Antipasti reigns supreme in Italian aperitivo time.  However when it comes to hosting during the holidays, planning ahead is imperative to ensure that the host actually enjoys oneself. Whether you are hosting this season, going to another’s party, or simply want to enjoy a fantastic appetizer for yourself, up your game with these Italian delights. They will impress all, including yourself.  Roasted peppers, Fried stuffed sage leaves, and Crocchette di patate are on the menu and will not disappoint!

supplì

Thursday, December 3 – Supplì

Supplì is the Roman answer to Arancini. Popular breaded and fried rice balls draw from traditional repurposing of leftovers, but also tell of the various influences that introduced them in 19th century rustic dining. Their name comes from “Surprise,” the French way to describe the astonishment of biting into a piping hot Italian rice ball and finding a heart of melted cheese. During our 90-minute lesson we take this surprise to the next level.

buccellati

Sunday, December 6 – Buccellati

In December, holiday desserts flood bakery shelves. Homemade Christmas cookies, like buccellati (Sicilian fig-filled cookies) are amongst our favorites. Today, despite pastry chefs making them year round, buccellati are linked to Christmas festivities. Baked in a wreath ring or as individual cookies, buccellati combine figs, dates, nuts and sometimes candied fruit. During our 90-minute lesson we’ll whip up these delicious sweets.

Saturday, December 12 – Cacio e Pepe

Today, cacio e pepe is on the menu. Although found in every Roman trattoria and in Roman homes, no plate of cacio e pepe is alike. From creamy and luscious to dense and dry, Pecorino Romano cheese, black pepper and pasta are the main recipe ingredients. Deceivingly simple, the secret to the success of this dish is in the creation of the perfect ‘cremina.’ During our 60-minute lesson, we will learn one version of this dish and talk about the cacio e pepe trends happening in Italy.

cheese for Christmas eve fish dinner

Sunday, December 13 – Wine & Cheese Pairing with Christmas Eve fish dinner

The focus of our December pairing lesson is wine, cheese and Christmas Eve dinner. We will taste 3 wines paired with 3 cheeses made in different styles for a delightful sensory experience and we will suggest wines that pair well with the famous fish feast prepared in Italian homes for Christmas Eve. Pairing lessons are taught in tandem by Eleonora, our resident cheese expert, and Gina, our natural wine lover. Both will share some of their Italian wine and cheese adventures.

ravioli

Tuesday, December 15 – Mascarpone & Chestnut Ravioli

Indulge in the flavors of the season! Chestnuts are for more than just “roasting on an open fire” as you will see during this class, during which we will create chestnut and mascarpone filled bundles of love for the joyous season. The timing of this class is perfect to create these beautiful ravioli to impress your holiday guests!

Saturday, December 19 – Lasagna

Lasagna is beloved and one of the oldest and best-known pasta dishes. Recipes change from region to region and from home to home based on local and family traditions. Nearly always rectangular in shape lasagna is layered with a combination of sauce, cheese, and sometimes meat. Today, Gina shares a recipe from her Neapolitan roots using tomato sauce and cheese. The perfect one-plate vegetarian dish to add to your cookbook and to keep in your freezer.

decorated pandoro

Sunday, December 20 – Decorated Pandoro Tree

Pandoro, along with its older cousin Panettone, stands among the typical Italian Christmas sweet and rich “breads.” We traditionally enjoy these during the entire holiday period, and are a favorite among children. One of the most fun and decorative ways to arrange Pandoro is turning it magically into an edible decorated Christmas tree! Most importantly, during our 60 minute lesson, the kids are the chefs, preparing this easy and delicious holiday dessert.
