Light menus for Italy’s Indian Summer

After a summer spent feeding on fruit, mozzarella and vine ripened tomatoes; we Italians are thrown back into reality, torn away from vacation places. Back-to-school and office rhythms dictate we step back into more substantial eating routines.

In Italy’s Indian summer, however, light menus can still be adopted. These dishes are easy on digestion and provide perfect alimentary support for students and adults getting back into post-vacation mode.

Personally, given my new eating regimen, these dishes are normal part of my routine. I will feed on a rotation of these dishes while I wait for pumpkin, chunky soups, mushroom, root and cruciferous greens season.
